Sometimes you just feel like having that big potato hit but you don’t feel like peeling potatoes. Enter our hash brown bake. Simply layer store-bought hash browns with bacon, smother it all in a cheese sauce, and then wait for the bake to go golden and bubbly.

6 Ingredients
– 2 x 375g packets of frozen hash browns
– 300g middle bacon rashers, coarsely chopped
– 50g unsalted butter
– 50g (1/3 cup) plain flour
– 625ml (2 1/2 cups) milk
– 255g (2 1/2 cups) pre-grated 3 cheese blend
5 Method / Steps
Step 1
Preheat oven to 230C/210C fan forced. Arrange hash browns on a large baking tray and bake for 15 minutes or until golden.
Step 2
Meanwhile, heat a medium non-stick frying pan over medium-high heat. Add the bacon and cook, stirring occasionally, for 3-4 minutes or until browned. Transfer to a paper towel-lined plate to drain.
Step 3
Heat the butter in the pan over medium heat until melted. Add the flour and cook, stirring, for 1 minute. Add the milk and whisk until well combined. Bring to a boil, whisking constantly, until the mixture is thick and smooth. Add 100g (1 cup) of the cheese blend and stir until melted and well combined. Remove from heat.
Step 4
Arrange half the hash browns over the base of a 2L (8 cups) baking dish. Pour over half the sauce. Sprinkle with half the bacon and half of the remaining cheese. Repeat with remaining hash browns, sauce, bacon and cheese.
Step 5
Reduce oven to 200C/180C fan force. Bake for 25-30 minutes or until the sauce is bubbling and the top is golden.
