Potatoes are the most versatile food which is great when mashed with butter and cream but adding cheese makes it even better. This casserole is also very versatile and you can come up with your own combinations which will be just as delicious.
Mashed potato casserole tips
The potatoes are par boiled until soft and you don’t want to over-mash at the start as it’s easier to mix everything together when it’s not too smooth. You can then either keep it slightly rustic or make it smooth before baking. You can choose your choice of cheese for the top for beautiful browning and even add some bacon or chorizo for some smokey pork which we all love. This recipe is also great with sweet potatoes and best served with braaivleis.
