1. Start with a great batter (and don’t overmix it)

Just like pancakes, waffle batter needs a light touch. Mix your wet and dry ingredients until just combined—lumps are totally fine. Overmixing activates the gluten, leading to tough, chewy waffles instead of fluffy perfection.

2. Let the batter rest

Once your batter is mixed, give it a rest—about 5–10 minutes. This lets the flour fully hydrate and gives you better texture. It’s the secret to airy, evenly-cooked waffles.
